Sunday Suppers invited us to collaborate once again-this time on a market-inspired menu to help kick off ALT Design Summit NYC.

The dinner took place at Sunday Suppers’ gorgeous loft space in Williamsburg, Brooklyn with over 35 bloggers from across the country in attendance. The meal consisted of a roasted cauliflower soup, heirloom tomato tartlets with homemade whipped ricotta, sumac-dusted roast chicken with swiss chard and hen of the woods over creamy polenta, and a decadent chocolate bread pudding with salted caramel and cocoa nib ice cream.

And what would a dinner for a blogging conference be without some amazing links? Recaps of the night here, here and here.

Celebrating Spring!

Springtime Menus

“I Google at least one item on your menu each week ~ Thanks for introducing me to so many new ingredients!”
~Got Lunch? member

Here at Kickshaw Cookery, we are in a constant tangle of menu development, product testing, and recipe tweaking. The onset of spring brings the abundance of Farmers Market produce into the dialogue as well. We truly enjoy menu planning, introducing our diners to less familiar ingredients and thinking of old favorites in a new light. Our Got Lunch? members were treated to the first ramps of the season a few weeks back, as well as the tender stalks of new asparagus. Another lunch included roast porchetta on Hot Bread Kitchen ciabatta with saffron aioli, market contorni, and gently simmered beans with stinging nettle pistou and market broccoli rabe: our idea of an ideal lunch – comforting and fresh, with an element of surprise.

If you think your company would be interested in our Got Lunch? program, send us an e-mail, and we would be happy to set up a tasting.

New Collaborations

This Spring, we were extremely excited about our new relationship with Sunday Suppers, a cooking class/dining experience in Williamsburg, Brooklyn. We had been following their work for a while now, and we were thrilled to be invited as guest chefs for an evening. Bringing our approach to food and meeting them to create a hands-on, tasty menu, we prepared a 5-course plated meal. Our demonstration included making gnocchi, assembling a local apple galette, and making ricotta from scratch.

We were going over a menu proposal with a client the other day when she paused mid-sentence and said,

I just want to put this out there, OK. I have this crazy idea...”

There exists a moment as caterers when a client utters those exact words, and your mind, uncontrollably, starts spinning worst case scenarios. Luckily, those fears were never realized.

“My daughter loves dumplings, and I was wondering if you could do a dumpling making station for the kids.”

Now this we could handle. We quickly enlisted our friend, the talented Isabel of Studio Roxas (she’s done all our branding, too!) to develop illustrations for our hand-outs. We even created Ziplock to-go give away bags with mini paper tags so that each kid could take home the dumplings they made. Check them out below!

There was wrangling involved but we managed to hold their attention for more than five minutes. After working through the basic shapes of half-moon, crescent, and the folded star, the kids went on to freestyle a bit, naming each new shape as they went, and we tore through over 100 dumpling wrappers!

It ended up to be the perfect activity for a group of six-year olds (and a few toddlers, too!) ~ and a nice way to spend our Saturday afternoon.
